An exhibition, a multi-sensory dinner and the tale of a splendid new vintage

What is behind a glass of magnificent champagne? We often ask ourselves this question while observing against the light the chains of bubbles rising towards the rim of the crystal. Rarely, however, do we manage to capture the time, patience, work and creativity that go into that moment of pleasure. Every year, Dome Perignon unveils it with an event called, precisely, Révélations.
Guided by chef de cave Vincent Chaperon, artists and creators, chefs and sommeliers belonging to the Dom Pérignon Society - an exclusive circle founded in Italy 20 years ago, which today counts 109 members from all over the world - meet to discover the mystery of the creative process of an iconic champagne, which has always been famous for being 'vintage only', i.e. creating only vintage wines.
This year, the appointment was in Barcelona and coincided with the presentation of the two new vintages forged by ageing time - a Maison constant - and united by tactile sensations that make them wines of extraordinary texture. Dom Pérignon Vintage 2015 and Dom Pérignon Vintage 2006 - Plénitude 2 were presented through a unique experience at Ricardo Bofill's iconic La Fábrica. It was also an opportunity to inaugurate Trace, the first exhibition open to the public that bears witness to the Pré-Assemblages, the name given to the creative process when the intuition gained in the vineyard and at the first tastings is transformed into an intention of meaning and style of the vintage. The exhibition translates the creative stages that chef de cave Vincent Chaperon went through, documented by a collective of talent and a variety of artworks - drawings, photographs and texts - and will be open to the public from 10 to 14 July 2024 at the Palau Martorell in Barcelona.
The event combined several sensory experiences, with a dinner born from the creative dialogue between chef de cave and star chefs Albert Adrià and Niko Romito, who explored in their dishes the dominant sense of Dom Pérignon Vintage 2015 and Dom Pérignon Vintage 2006 - Plénitude 2: the tactile sensation, the texture of wine.
An experience that can be partly relived from September at the restaurant Enigma, Adrià's new location in Barcelona, where Dom Pérignon and chef Albert Adrià will present a tailor-made gastronomic experience, with two new creations inspired by the two newly presented vintages of Dom Pérignon, which will be available on the menu for just one month.
