It is the turn of 2015 for the historic Bollinger vintage. The rose version is a blend of Pinot Noir and Chardonnay. The nose has a bouquet of fruit, strawberry juice and tangerine. Soft and juicy on the palate, with hints of small red fruits and a fresh, citrusy finish. It accompanies a full meal, but is perfect with large shellfish: glazed lobster, lobster a la plancha.

Rare Rosé Millésime 2014

Since its inception in 1985, Rare Champagne has labelled only four vintages of its vintage rosé. The 2014, released in September in the iconic jewel bottle, is a blend of 60% Chardonnay and 40% Pinot Noir, has rested sur lie for 9 years and is a deep, almost coppery pink. The nose opens with aromas of red and black fruits and blood orange. This is followed by secondary aromas of apricot and candied orange, violet and rose and a touch of dark chocolate. Intense and powerful on the palate, it evokes pomegranate, morello cherry and the velvet of custard. The word chosen by the Maison to describe it is 'extraordinary' and objectively this is not an exaggeration. Guide price 500 euros.

Perrier-Jouët Belle Epoque Rosé 2014

Certainly, the most spring-like of all, in the historic Art Nouveau bottle with anemones. The rosé version of Belle-Epoque, vintage 2014, combines Chardonnay, Pinot Noir and a touch of Meunier. Taking care, even in the rose version, to maintain the floral style that characterises the cuvée. Subtle, delicate, it has aromas of peony, cherry blossom and cassis, with a touch of mandarin. Rich and elegant on the palate, with notes of orange blossom and raspberries playing with the spices of cumin and green pepper. Recommended retail price 358 euro.

Aromas of violets, roses, blood oranges, mineral and spicy notes of chalk, liquorice and black tea, the palate is rich and generous, with a savoury finish. It goes well with fresh vegetable dishes, savoury and salty dishes, citrus and spicy touches such as ginger. Approximate price 320 euros.
