Production growth of 8.3% in 2025, strengthening of wholesale quotations and the best consumption growth performance among hard and semi-hard PDO cheeses on the domestic market, with a +4% in volume and +11.3% in value. These are the main results presented during the annual Assembly of the members of the Consorzio Tutela Formaggio Asiago, during which the round table "Ecosystem DOP 2040: Territory, Talent, Tourism" was also held
In 2025, a total of 1,629,284 wheels of Asiago Dop were produced for a production turnover of 181 million euro, up 16.6%. Fresh Asiago, with 1,371,339 wheels, recorded +6.7%, while Seasoned Asiago, with 257,945 wheels, registered a double-digit increase: +17.6%. "The growth in production has been supported by a model of product quality enhancement and a production efficiency mechanism that recognises the most virtuous producers and encourages the exploration of new niches and new markets," comment the Consortium.
On the price front, there was a strengthening of wholesale quotations. The average price of Fresh Asiago stood at €7.18/kg, up +12.54% compared to 2024. Seasoned Asiago reached an average price of 8.57 €/kg, marking an increase of +4.38%.
In the domestic market, Asiago cheese consumption recorded the best combination of increases among hard and semi-hard PDO cheeses in 2025: +4% in volume and +11.3% in value. "A result supported by targeted choices in terms of quality, promotion, presidium of distribution channels, and opening of new outlets," reads a note. "In the first three months of 2026, the trend shows resilience with respect to the general slowdown, with growth of +2.9% in volume and +2.6% in value. In particular, the Asiago Denomination confirms its ability to intercept new consumption models, increasingly oriented towards practicality and versatility of use. This is reflected both in the innovation of formats such as snacks, cubes, petals, slices, grated and julienne, and in the growth of processed products, which increased by 169.7% in the two-year period 2023-2035'.
The Consorzio Tutela Formaggio Asiago continued on the path of sustainability that, from 2022, involves the entire supply chain with the innovative Asiago Green Edge project. The action promotes responsible development based on the protection of the natural environment, animal welfare and energy efficiency. This also includes the adoption of the voluntary Made Green in Italy certification of the Ministry of the Environment and Energy Security to incentivise sustainable production models, confirming a commitment started more than twenty years ago towards sustainable development under the environmental, social and economic profile of production.
