Biorsaf, a digital platform for food safety
A 5.2 million capital increase, led by P101, for the Tuscan company, which is acquiring Cooki and drawing up a three-year development plan
Not a ‘stylistic exercise in innovation’, but a response to ‘a market need’. Marco Papalini, founder and CEO of Biorsaf, sums up the decision to set up his company in 2021 in this way; within just a few years, it has become a leading player in the digitalisation of food safety and quality processes. As a food technologist, Papalini and his team have over 40 years’ experience in the sector and had long recognised the need to make the management systems governing procedures in the food sector – from restaurants to the HoReCa sector and large-scale retail – smarter and more efficient.
The Grosseto-based company’s journey began five years ago with six partners, and by 2023 – the year of its first production run – turnover had reached 100,000 euros, before tripling the following year. At the end of 2024, the first investment round of 1 million euros was secured, backed by the Maia Ventures and Farming Future funds (promoted by CDP), which led to the company’s full-scale industrialisation, driving revenues up to 900,000 euros in 2025, with a total of 20 employees. Now, the company is taking a further step forward with an additional €5.2 million funding round, led by P101, a venture capital firm with an international focus, joined by Maia Ventures, Farming Future and Toscana Next as a co-investment fund, alongside the main Tuscan banking foundations.
The capital increase will be used to launch the three-year development plan, which envisages exponential growth for the company, achieved both organically and through external acquisitions. The acquisition of Cooki, a platform dedicated to the digital management of food information, forms part of this strategy. The integration of the two companies will enable the creation of an AI-based platform capable of providing the market with a single solution for digitising all compliance procedures and data management within the food supply chain.
The aim is to set a new technological standard to tap into a rapidly growing market – that of food, workplace and water safety – which in Italia comprises 3.4 million businesses with a combined turnover of over 12 billion euros, whilst the digitalisation rate remains at just 3 per cent. “The aim is to exceed €30 million in turnover by 2029,” says the CEO. “We want to secure the largest market share in the sector with our products, but also through acquisitions and by expanding abroad.”
