Finocchiona Igp record: over a million pieces for the first time
In 2025 production hit an all-time high: consumer turnover over 25 million euro

Production of Finocchiona PGI is at an all-time high and the typical Tuscan cured meat is increasingly appreciated by consumers. Proof of this are the figures provided by the Protection Consortium: 2025 was the year with the highest volume of sausage ever with 2 million 550 thousand kilograms of mixture and the denomination breaks the wall of 1 million pieces of sausage (1 million 36 thousand pieces, +5.7% more than in 2024) and confirming a positive growth of +11% of product processed in the last five years.
In terms of turnover, production value is estimated at EUR 14.7 million, which rises to almost EUR 25.5 million on sale.
"A production," reads a note, "that translates into a solid growth in certified product placed on the market (1 million 960 thousand kilograms) equal to +4.8% compared to the previous year. The overall figure for vacuum-packed product also returned to growth, closing, after a 2024 contraction, in double figures (+15%), reaching 738 thousand kilograms packed'.
Figures were also at their highest in the pre-sliced segment: 4 million 865 thousand trays were packaged in 2025, up 35% compared to 2024.
Exports cover just over 30%, but in perspective it should be noted that the start of marketing in the USA has just taken place (among other things with participation in the Summer Fancy Food Show in New York, also confirmed for 2026). The EU market grew by 1.5% in volume, with Germany confirming its position as the denomination's main foreign country of destination with 21% of the total.
