Farewell to Antonio Bonollo, third generation in the distillery

The company is still firmly in family hands; in the province of Padua two factories in Conselve and Mestrino

Antonio Bonollo, the third generation of the family and a pillar in the history of the distillery of which he was a board member, Distillerie Bonollo Umberto, a company more than a hundred years old in Padua, has passed away.

Known to everyone as 'Tonino', Antonio Bonollo, always supported by his wife Luciana, dedicated more than 70 years to the art of distilling. "Today he leaves his legacy of commitment and passion to his son Luigi and daughters Anna and Laura, who are part of the fourth generation of the family," they explain in the company, where they remember him as "a master distiller of exceptional talent and a man of extraordinary energy, Tonino was always present in the company, working in close contact with all the people: his philosophy was that the company should be treated as a family, a principle that inspired and motivated entire generations of workers and collaborators'.

Untiring was his commitment and dedication to working among the stills with the aim of raising the quality of Bonollo distillates; crucial was his perfectioning of the double distillation technique implemented in a pioneering manner together with his brothers Giuseppe, Dario, Amedeo and Bruno as early as the 1970s.

Armed with a passion for making grappa, inherited from his grandfather Giuseppe, the company's founder, "he has always known how to exploit the best of tradition by sharpening his wits and aiming for innovation. Tonino has played a crucial role in the development of the Conselve distillery, contributing to the creation of the modern Bonollo Single System which, combining over a century of expertise and innovation, embraces the management of all process phases: from the selection of the pomace to the flexible distillation, which allows us to obtain spirits of unparalleled sensory character, and even the valorisation of by-products with a view to a full circular economy".

The funeral will take place on Saturday 29 June at 10.30 a.m. in the Church of Mestrino (PD).

The Circular Economy

Today still firmly in the hands of the family with the fourth generation; the base is in the province of Padua with two plants: the distillery in Conselve and the Mestrino site. The 2022 turnover of Distillerie Bonollo Umberto is 73 million euros, up from 2021 (65 million).

Central is the choice of a concrete circular economy. In the process, the raw materials arrive at the distillery - obtained in the cellar following wine production - still rich in aroma and fragrance. The exhausted pomace, i.e. depleted of its alcoholic and aromatic potential, after the grappa is obtained, is used to obtain various components, such as calcium tartrate of natural origin, the salt used to obtain tartaric acid, used in oenology, the food industry and the pharmaceutical sector, but also biomass obtained by grinding dried grape pips which, being rich in cellulose and nutritional substances, are destined for the production of animal feed and partly to feed farm boilers in order to obtain steam to distil and heat to dry the pomace itself, thus avoiding the use of fuels of fossil origin. Again, the grape seeds are used to obtain the edible oil of the same name, which has special dietary characteristics.

Thanks to this vision, Distillerie Bonollo Umberto of Padua and Italgas inaugurated Italy's first biomethane production plant in a grappa distillery, connected to the Italgas distribution network.
