The revenge of Lambrusco Doc: this is why it is a wine that appeals to young people (and not only)

How are sales and consumption of wine doing in the world? In the USA - which is the largest wine market in the world and therefore the model on which to tighten the frame - the wine industry currently marks -8.9% and this is a general negative trend. Contrary to this figure, the Doc Lambrusco (not the Igt one aligned with the global trend), i.e. the quality one that producers have been trying to promote in recent years, is objectively on the rise.
Let us try to understand the reasons for this in order to predict the imminent consumption flows. Lambrusco Doc is sought after by the new generations and, therefore, we can define it as a "contemporary" wine by virtue of certain characteristics that distinguish it and which I will attempt to focus on briefly here.
First of all, it has pleasant bubbles, quite fine and elegant, but also a lower alcohol content compared to the average of Italian wines (this aspect currently makes the difference), then it has high acidity (not without tannins, especially in the Reggio Emilia type made from Salamino grapes) which makes it 'gastronomic', versatile in that it is fresh and pleasant to drink without being too demanding. Today's taste, in fact, is turning to less concentrated wines, less structured than a few years ago and more pleasant.
The versatility of Lambrusco in Italy is still little esteemed, while abroad it is already highly appreciated, since it is a wine that can easily accompany many different types of cuisine, not only that of Emilia, which is notoriously tasty, succulent and rather fatty.
Think of it on humami rich dishes such as those of Japanese cuisine, or on a pork barbecue; I am inevitably thinking of ribs, pulled pork or the American brisket. Some other very successful pairings, in my opinion, you can try with Mexican tacos and a bit with all spicy Thai or Indian cuisine.
