The cocktail bars not to be missed if you are on holiday in Italy

The big names now also aim to offer cuisine that is increasingly integrated with the cocktails on offer

The cocktail bar is evolving: it has ceased to be a place with an identity of its own, to become a permanent fixture in restaurants, pizzerias, high-end hotels and even neighbourhood bistros. The boundary between cuisine and mixology has become increasingly thin, creating an integrated experience in which the cocktail becomes part of the gastronomic story.

According to TradeLab data, in 2024 more than 35% of fine dining restaurants in Italy will offer a cocktail pairing with their dishes, while 60% of luxury hotels will include a cocktail bar with a dedicated menu. Even in the world of pizza, this trend is consolidating: about one in four of the venues awarded by sector guides now has a regular bartender and a cocktail proposal that is as curated as that of the wines.

It is a change of perspective: no longer just a glass of wine as a 'natural' accompaniment to a dinner, but tailor-made cocktails designed to enhance the flavours, aromas and textures of dishes. Sometimes even with an 'obligatory path' as in the tasting menus of many starred restaurants. From signatures inspired by the territory, to reinterpretations without alcohol, to pairing studied by the chef in synergy with the bar, the dining experience is completed with a glass - often surprising - that tells a new and creative side of contemporary cuisine.

Born to break the traditional mould, Dry Milano was among the first venues in Italy to imagine a true dialogue between pizza and cocktails. Not a pizzeria with a bar, nor a cocktail bar with a kitchen, but a project that was able to unite two worlds with aesthetic coherence and gastronomic quality, a forerunner of paring. And so the continuous dialogue between the pizzaiolo Lorenzo Sirabella, whose menu moves between distinctive doughs and daring toppings, is combined with the pairing of Edris Al Malat, the bar manager.

Dry Milano thus continues to represent a point of reference for those seeking an experience capable of bringing together two arts - pizza and cocktails - that are now increasingly related.

A new cocktail to celebrate a new boutique. The Due Lune Puntaldia Resort & Golf in San Teodoro in Sardinia, already famous for its cocktails with a crystal-clear water backdrop, inaugurates Caraluna, a new boutique designed as a tribute to the authentic beauty of Gallura. A project that is not limited to shopping: to celebrate it, a cocktail of the same name has also been created, combining local roots and international influences: Silver Tequila, ginger, lime juice and cane sugar are combined with fresh peppermint grown in the resort's garden, while the most original part comes from Cool Mate, a natural infusion based on mate - the traditional South American drink known for its stimulating properties and more gradual energy than tea and coffee, created by Giovanni Magnano, Teresa Missoni's husband, with whom this cocktail was conceived and developed.

GAIA- Sala Comacina

Luca Salvioli, bar manager of GAIA, the cocktail bar at MUSA Lago di Como, in Sala Comacina, won first prize at the Como Lake Cocktail Week 2025 thanks to 'Sensuum', a drink that won over the jury for its technique, balance and originality. An award that increasingly attests to the importance of an excellent cocktail list within a hotel. The cocktail is the result of the encounter between Diplomático Reserva Exclusiva and Campari, linked by a complex and refined Kintsugi cordial based on apple, milk, salted caramel, miso, citrus fruits and a fragrant five-spice note. An address on Lake Como not to be missed.

N G Lounge & Garden Bar - Venice

The new cocktail bar G Lounge & Garden Bar opens at the Nani Mocenigo Palace (5*L) in Venice, with a drink list curated by Gennaro Florio and inspired by the palace, its botanicals and great Italian spirits. Each cocktail tells a story linked to the mansion or the plants grown in the garden, such as pomegranate, lemon thyme, mint and rosemary. Among the signature drinks is Elena e Giorgio, inspired by the love story between Elena Barbarigo and Giorgio Nani, sealed by the very palace they received as dowry. A new Venetian address where every sip has a story.

The Arabesque Café Bistrot- Milan

The brainchild of Chichi Meroni, L'Arabesque Café Bistrot is a constantly evolving project that weaves together art and design, collecting clothing, rare books, mid-century furniture and customised vintage jewellery.

The cocktail bar is an ideal meeting point: seated on stools or velvet in iridescent colours, amid references to surrealism and a jazz background, guests move through an environment designed as an 'architecture of taste'.

The Arts Bar is an essential address for those who love Venice and the world of spirits. And this year, The St. Regis Venice, its host, renews its collaboration with the famous Murano glass workshop Berengo Studio, signing a drink list that combines signature cocktails and designer glasses. In fact, the new menu is the result of a four-handed work between the cocktail bar team - led by Food & Beverage Director Facundo Gallegos and Head of Bars Ludwig Negri - and the glass masters: designer Mariapia Bellis and award-winning master glassmaker Adriano Berengo. The result is a true journey between art and taste: each cocktail is designed to be paired with a unique glass, created ad hoc, that enhances its aromas, garnishes and textures. A tribute to Venetian culture and the tradition of Murano glass.

In the heart of the secret garden of the Hotel D e Russie, Aquazzura Bar is born, a sensory experience that combines the sophistication of contemporary mixology with the lively soul of Mexican cuisine. The protagonist is tequila, queen of a drink list curated by Federico Pavan and Mattia Capezzuoli, where the cocktails tell stories of travel and research. These include Edgardo's Margarita, with Tequila Blanco, Cointreau, Grand Marnier, fresh lime and seasonal fruit, served in exclusive handmade agave glasses. Plus the Roman Aurora, a sophisticated blend of aged Reposado, Timur pepper and a touch of Champagne.

At the 10_11 Bar in Portrait Milano, cocktails are portraits of Italian flavours and aromas. Between the columns of the 16th-century cloister, the menu offers signature cocktails such as the 10_11 Spritz, with Americano Savoia, pink grapefruit and prosecco, and the Magistris Negroni, a reinterpretation of the classic with a touch of laurel and ancestral wine. The drink list is dedicated to cocktails inspired by the summer festivities of the Italian piazzas, which pay homage to the authentic flavours of the regions of the Bel Paese.

The Bear in the Cathedral, Messina .

The latest opening of the L'Orso group, L'Orso in Duomo brings to the centre of Messina a project combining signature pizza and evolved mixology, which has already become a new city landmark. In an elegant setting with a dehors overlooking the Duomo, the restaurant celebrates the province of Messina in all its variety, from the mountains to the two seas and the islands, reflecting this philosophy also in the cocktail menu. The special mix, created by Matteo La Spada with four flours and 32 hours of processing, is accompanied by drinks by Daniele De Carolis, designed to match the toppings: from yuzu calamansi, caper infusion, tequila and Cayenne pepper to homages to the territory such as cucuncio and Pantelleria caper powder.

Paparazzo Bar&Rooftop, Rome

The terrace on the 7th floor of Le Méridien Visconti Rome, is a cocktail bar inspired by the eclectic '60s, harking back to Federico Fellini's film 'La Dolce Vita' and the figure of the paparazzo, the VIP photographer, in the heart of Prati. The realm of Bar Manager Edoardo Arcesi, the drink list features twelve signature cocktails inspired by La Dolce Vita but also by pop culture, such as the Paparazzo, a cocktail served in a fresh and spicy tasting glass, the Man On The Moon, the Marilyn Monroe and the Woodstock. The gastronomic proposal, curated by chef Giuseppe Gaglione, is structured with dishes to be shared in sharing style, accompanying the cocktails.

Ulivum Terrace & Lounge , Taormina

The historic Grand Hotel San Pietro in Taormina opens a new format for the season: the Ulivum Terrace & Lounge bar. At the centre of the space, a large scenic counter incorporates a pizza oven, in operation daily from 12:30 to 19:30.

In this time slot, cocktails are designed to accompany pizza, with a concept that fuses flavours and music, a tribute to bar manager Marco Patanè's career as a guitarist. The drink list reveals this creative soul in the signature 'Beer Mistake', inspired by the song Misery by Maroon 5.

Villa Majella, Guardiaghele

In the Abruzzo-starred Villa Majella, sommelier Pascal Tinari has developed a cocktail pairing course to accompany the gouremt dinner. So much so that, in addition to the path in the dining room, he has also dedicated a bodoir to aperitifs and after-dinner drinks: known as the 'sala del camino' (fireplace room), which moves to the restaurant terrace during the summer. A menu of 8-10 references with a nice section dedicated to non-alcoholic drinks, and simple but sophisticated cocktails that change according to the seasonality of the ingredients. "I don't want to replace the work of a bartender, but since we set up the Sunday cocktail, guests always ask us for it, a little treat before and after a meal," says Tinari.

SOLUM, Rome

In the green heart of the Appia Antica, Solum, the realm of entrepreneur Edoardo Marchese, is the new destination for well drinks, with an open-air cocktail bar that transforms every evening into a multi-sensory experience. As soon as the sun goes down, amidst aromatic plants and soft lighting, the bar lights up with a drink list inspired by nature, in which botanicals such as sage, laurel and basil meet selected spirits and skilful blends. Each cocktail is designed to dialogue with the ambience, with chef Gaetano Costa's grilled dishes. Among the proposals are Alloro, with Martini Bitter Riserva, Martini Bianco, Bombay Sapphire and bay leaf, and Salvia, based on Patrón Silver Tequila, fresh sage, agave syrup, lime and apple.

The Marquis, Portu Quartu

The cocktail and Amaro Bar of Il Marchese, after the venues in Rome and then Milan, lands in pop-up format for the entire summer of 2025 inside the splendid Poltu Quatu complex in Sardinia. With a terrace overlooking the port and the sea, the stars of the Sardinian drink list are the bitters, the undisputed protagonists of the mixology proposal signed by Bar Manager Fabrizio Valeriani. Two cocktails pay homage to the island in their name and are the Smeralda Lemondrop, a twist on Lemondrop, with Stolichnaya Gold Vodka, Amaro Nepeta, Simple Syrup, lime juice and the Poltu Quatu Sour a twist on Pisco Sour with Pisco, Amaro Montenegro, lime juice, green tea syrup and egg white. Also on the menu are timeless favourites like the Americano #1 and the Cavaliere di Franciacorta.

Lumen Garden, Rome

The Lumen Garden, dehors of The St. Regis Rome, this year adds a special touch thanks to the collaboration with Bagno Saint Tropez in Fregene. The lido's iconic red and white setting brings a convivial and relaxed atmosphere to the city. From the afternoon, starting with the iconic tea ritual at 5.30 pm, the Lumen Garden welcomes Roman and international guests with aperitifs curated by Bar Manager Danilo Forte. Cocktails include 'Un Americano a Roma' with notes of bergamot, and the No-Groni, an elegant non-alcoholic proposal, for a complete experience from afternoon until late evening.

Bar Artemisia , Florence

In the heart of Florence, overlooking Piazza della Repubblica, the new Bar Artemisia inside the Rocco Forte Hotels' Hotel Savoy is a tribute to the visionary force of Artemisia Gentileschi, rebellious artist and pioneer of feminine expression in the 17th century.

Here, art merges with auteur mixology and Tuscan-inspired cuisine, in a tale that celebrates the courage of those who dare. Behind the bar, mixology master Salvatore Calabrese signs the menu by choosing female spirits and accompanying the aperitif with Fulvio Pierangelini's dishes that play with local ingredients and artistic suggestions.

Amaro Mediterranean Bistrot, Rome

In the heart of the 5-star luxury Villa Agrippina Gran Meliá, the Amaro Mediterranean Bistrot has been revamped for the summer with a concept that celebrates Italian-style living with a new space, immersed in design, art and contemporary mixology. The absolute protagonist is the new drink list: a selection of signature cocktails inspired by the scents and colours of the season, designed to offer a sensory journey through Mediterranean flavours, fresh ingredients and liquid creativity.

Zuma Capri, Capri

Located on the rooftop of Capri Palace Jumeirah in Anacapri, Zuma Capri offers panoramic views of the Gulf of Naples and the Sorrento Peninsula. The cocktail list features Japanese-inspired infusions, seasonal ingredients and fresh herbs, with cleanly structured drinks and layered flavours. A curated selection of sake, Japanese whiskies and international wines complete the offering.
