'50 Best Restaurants': Maido wins, up to 6 Italians in the rankings

The Peruvian restaurant is number 1 in the world. Italians went from 4 to 6, led once again by Lido84 in 16th place. For the first time the award ceremony in Italy, in Turin

Here comes for the first time from Italy, from the Lingotto in Turin, the name of the winner of 'The 50 World's Best Restaurants'. It is the Peruvian Maido of chef Mitsuharu 'Micha' Tsumura (last year in fifth place and sixth in 2023) to take the place of Barcelona's Disfrutar (no longer in the race like all former number 1s from 2019, which enter the 'Best of the Best').

For the Italians steps forward

Italians go from 4 last year to 6 this year. Riccardo Camanini's Lido 84 Gardone Riviera is confirmed first in the tricolour ranking, in 16th position, but was 12th in 2024. Niko Romito with the Reale di Castel di Sangro goes from 19th to 18th place. Norbert Niederkofler's Atelier Moessmer jumps from 51st to 20th place. In 31st place we find Le Calandre di Rubano, a re-entry in the 50Best. Chef Enrico Crippa's Piazza Duomo di Alba continues its climb, now at number 32, it was 39th last year, when it climbed three positions. Uliassi di Senigallia is in 43rd place (it was in 50th last year, when it had lost 16 positions, now it therefore recovers seven).

Only Thailand can boast 6 restaurants in the list of the top 50 (followed by Peru, France, Spain and Japan, which have 4), so we can speak of a satisfactory result for our country, which, however, no longer manages to come close to the top positions after the seventh place of Lido 84 in 2023. and the triumphs of Osteria Francescana in 2016 and 2018.

The Woodford Reserve Icon Award, a sort of lifetime achievement award, went to Massimo Bottura and Lara Gilmore, for their ability to "redefine the role of hospitality in society". From the stage, Bottura dedicated the award to all the people who work in the restaurant world ("dishwashers, sous chefs, wait staff") and recalled the importance of social commitment carried out, among other things, with projects such as Food for soul and Tortellante. 'A pasta dish cooked with love can be extraordinary. I have learnt that the main ingredient is culture. We will never stop cooking,' he said from the stage. The guesthouse Casa Maria Luigia was the only Italian ranked in the 51-100 positions released a few weeks ago.

The excellence of Peru and Nikkei cuisine

The first place in Maido is a new recognition for all Peruvian haute cuisine (Virgilio Martinez's Central in Lima was number 1 in 2023) increasingly appreciated worldwide, but also to the contamination between different culinary traditions, which result in that innovation always rewarded by the 50Best that ideally unites all the chefs who recognise themselves in the vanguard of this international 'community'.

"Gastronomy, food, hospitality can do great things, can turn dreams into reality, can solve many things that we think cannot be solved. Right now the gastronomy industry is an example of what we can all do together. We talk a lot about environmental sustainability, but we rarely talk about human sustainability, and I think the power of food can be an example of how we can all live together,' said Chef Mitsuharu Tsumura, or rather 'Micha' as everyone in Peru knows him, from the stage.

Born in Lima in 1981, into a family of Japanese descent, Micha's childhood was spent between two cultures that would profoundly shape his view of cuisine: that inherited from his family and that experienced on the streets of Lima. Trained in culinary arts and food and beverage management in the United States, 'Micha' then went to Osaka, Japan, where he worked in traditional restaurants such as Seto Sushi, specialising in sushi, and Imo to Daikon, dedicated to the cuisine of izakaya, the popular Japanese taverns, reports the Peru21 website. Upon his return to Peru, after a stint at the Sheraton Hotel where he became fascinated by the intersections of Peruvian and Japanese cuisine, fifteen years ago he founded Maido, whose name in Japanese means "thank you for always coming", today a world reference of the so-calledNikkei cuisine, the culinary fusion that uses Peruvian ingredients and Japanese techniques. "Nikkei cuisine is not a passing fad, it is a way of understanding racial mixing as a creative force. If we are at the top today, it is because first there were hands that sowed, migrated, resisted and dreamed. We owe everything to them,' he predicted six years ago, when interviewed by Perú21.

"The team at Maido," commented William Drew, content director for The World's 50 Best Restaurants, a list curated by the British company William Reed, "has shown extraordinary dedication, naturally integrating Japanese techniques with traditional Peruvian ingredients to create dishes that captivate and surprise guests.

Albert Adrià with his restaurant Enigma (number 34) wins the Chefs' Choice Award 2025, an award given directly by other chefs.
The award for sustainability went to the Celele in Cartagena (Colombia), a new entry at 48th place in the ranking.
Mindy Woods is the "Champion of Change Award".
Mohamed Benabdallah of the Asador Etxebarri in Atxondo is the Best Sommelier.
Angélica Ortiz wins the 50 Best Restaurants Scholarship, in collaboration with Parmigiano Reggiano.
Potong in Bangkok is the highest new entry in 11th place. Maxime Frédéric from Paris wins the Pastry Chef Award 2025.
London's Ikoyi (15th), wins the Highest Climber Award 2025, gaining 27 places over the 2024 ranking.

"The ranking is drawn up by 1,120 international restaurant industry experts and travelling gourmet experts, who make up The World's 50 Best Restaurants Academy. The Academy, which ensures equal gender representation, comprises 28 different regions around the world, each consisting of 40 members, including a jury president. No event sponsor has any influence on the voting process. The consulting firm Deloitte independently evaluates and verifies The World's 50 Best Restaurants list, including the 51-100 ranking. This evaluation guarantees the integrity and authenticity of the voting process and the lists drawn up,' the organisers assure.
