‘Ein Prosit’: how top chefs, themed food trucks and tastings showcase the local area
From 14 to 18 October, Udine will once again host the 27th edition of the event that brings together 100 chefs across more than 130 events: 20,000 visitors are expected, with an estimated turnover of 8 million
Top chefs from kitchens all over the world come together behind the stoves to create unique dinners, alongside food trucks and tastings of wine and local specialities. The winning formula that characterises Ein Prosit, a widespread event that has been held in Udine for 27 years now, taking place this year from 14 to 18 October, bringing the best of contemporary international gastronomy to Friuli Venezia Giulia.
There will be around a hundred chefs, over 130 events and 20,000 expected visitors which, according to the organisers, will generate a turnover of 8 million for the local area. But rather than the figures, the emphasis is on the uniqueness of the format, which is probably the secret to its longevity: ‘Udine is once again our headquarters of pleasure. A small, organised chaos where boundaries fall away, glasses are raised instead of walls, and no one needs to show a CV to earn a place at the table,” say the project’s curators Claudio Tognoni, Paolo Vizzari and Manuela Fissore.
“Each evening will be a journey through the flavours and techniques of haute cuisine, during which the chefs’ creativity, combined with ingredients of the highest quality, will give rise to dishes capable of surprising and captivating,” promise the organisers.
Among the leading figures are the three-Michelin-starred chefs Massimiliano Alajmo and Norbert Niederkofler, who embody “two different visions united by a commitment to research, sustainability and excellence”. Alongside them, Ein Prosit also celebrates the “value of contemporary trattorias”, with representatives such as Diego Rossi of Trippa in Milan and Sara Ciccolini of SantoPalato in Rome, who are capable of “showcasing a cuisine that is authentic, personal and deeply rooted in Italian gastronomic culture”.
The 2026 edition also marks the return of some of the long-standing figures who have helped shape Ein Prosit’s identity over the years, such as Carlo Cracco and Corrado Assenza of Caffè Sicilia in Noto, alongside other names that have always been key figures for the event, including Ana Roš of Hiša Franko in Kobarid, Matias Perdomo of Contraste in Milan and Antonia Klugmann of L’Argine a Venco in Dolegna del Collio. Ein Prosit will also bring together three of the last six winners of the The World’s 50 Best Restaurants: the Peruvians Mitsuharu “Micha” Tsumura of Maido and Virgilio Martínez of Central, and Mauro Colagreco of Mirazur in France.
The world of pizza will see the following gathered in Udine: Franco Pepe of Pepe in Grani in Caiazzo, Francesco Martucci of I Masanielli in Caserta, Gabriele Bonci, Simone Padoan from I Tigli in San Bonifacio, the young talents from Confine in Milan and Roberto D’Avanzo from Bob Alchimia a Spicchi in Montepaone.
