Fattorie Garofalo: not only mozzarella, strong growth also for other buffalo cheeses
On the occasion of Marca in Bologna, the leading buffalo milk company draws a balance of the sector: buffalo mozzarella (+8%) remains the driver; burrata (+18%) soars, ricotta also does well (+11%)
Fattorie Garofalo, one of the world's leading producers of Mozzarella di Bufala Campana Dop, will be among the participants at the 22nd edition of Marca by BolognaFiere, scheduled for 14 and 15 January 2026 at the Bologna Exhibition Centre.
At the Bologna event Fattorie Garofalo reports a strong growth trend for the buffalo cheese segment. According to NielsenIQ data elaborated for Fattorie Garofalo, in the last year the references made only with buffalo milk recorded a growth of +7.7% in volume and +8.1% in value, compared to a more contained increase of +1% in volume and +5.1% in value of the overall segment that also includes cow, goat and sheep milk variants.
"A dynamic supported by the added value of buffalo milk," explain Fattorie Garofalo, "which not only qualifies fresh dairy products, but also proves increasingly strategic in the preparations and recipes in which it is used as an ingredient. Its nutritional characteristics, in particular its high protein content, make it possible to develop premium proposals with a high perceived value, responding to the growing demand for quality and functionality also in private label ranges'.
The analysis by category shows, in particular, a very positive dynamic for some key references.Buffalo burrata confirms itself as one of the main growth drivers, with an increase of +18%, while Buffalo ricotta also shows double-digit growth (+11%). Buffalo mozzarella also outperformed the category average, strengthening the segment's premium positioning (+8%).
The development of the stracciatella di bufala is part of this favourable market context, a product that, according to analyses, has the conditions to replicate the successful path already recorded by burrata.
Estimates indicate - they add at Fattorie Garofalo - for this reference a potential penetration of up to 20% of the market in the category, intercepting a growing demand for products with high added value.
