Bra is famous for the production of cheese (the international Cheese event is held every two years) and the renowned raw veal sausage (the then Kingdom of Italia issued a special law to protect its production), as well as for being the cradle of the Slow Food movement. Its founder, Carlo Petrini, used to stop by on Sunday mornings at Bar Pasticceria Converso, counted among the 'Historical establishments of Italia' (it was opened in 1838 with a confectionery licence) and recognised as the 'salotto buono' of tasting in the heart of the city: furnished with the original boiserie and cherry wood furniture, it is an unmissable stop to enjoy a special savoury aperitif, the Brajoux, an embrace between the pastry shop's choux pastry and Bra sausage (to treat yourself, the recommended address is Macelleria Urbana, a small shop with adjoining workshop run by father and son). Gastronomic experiences are an integral part of a visit to Bra, and one place to point your navigator is definitely Giolito Formaggi, a shop where you can 'physically' enter the world of dairy products in a one-hour tasting itinerary paired with local wines, including creations such as Braciuk (which is made from a combination of Bra Tenero DOP and Barbera grape marc) and a visit to the ageing vault.
