Scent of olives, black celery and truffles in the rural landscapes from Trevi to Montefalco
Excursions into cultivated forests and truffle grounds
Truffle-hunting expeditions often begin in the heights of the Pigge mountains, where the nature reserve offers a wild version of the search, and end in the estate's controlled truffle fields. The dogs are trained from puppyhood with a patient method that begins with the game of retrieving with yellow Kinder egg containers. It is at this time that they learn the intricacies of a hypogeous fungus that is born from the embrace between roots and spores, with the prized black truffle reaching its peak in the period between December and March, while wild production is tested by climate change and the abandonment of the mountains. Truffle life requires care and respect for the sun's rays, and here at the estate the method of refinement even involves a natural cheese cave and includes the rearing of prized breeds such as Marans chickens with chocolate-coloured eggs.
