In this context of profound spirituality and silence, the gastronomic project of San Pietro a Pettine has recently taken a new and visionary road thanks to the hand of young chef Alice Caporicci. In the in-house restaurant, housed in what was once the family home, Alice's cuisine focuses on a realism made up of play and familiarity, with a menu structured in three blocks that allow guests to compose their own path between popular dishes and research experiments, always putting the fresh truffle at the centre without ever forcing the experience. The truffle here is a living element, and the transition from the earth to the table is accomplished through the total experience of "hunting" guided by expert truffle hunters and their faithful dogs.
