Stories of herdsmen in the valleys of Ayas, Gressoney and Valsesia
There are itineraries that lead to small paradises of taste and tradition. No great directions are needed to reach them: just follow the buttery aroma of the cheeses, which becomes more intense with every step, mixing with the damp smell of the woods and that of freshly cut grass. These are the perfumed paths of Monte Rosa, between the valleys of Ayas, Gressoney and Valsesia, where you can discover, on foot, the stories of the malgari (shepherd's huts) and their huts, together with the scents and flavours of high altitude. In these places, one comes across true works of dairy art, partly due to the altitude, the oxygenated air in which the animals live and the properties of the soil, but also largely due to the skill of the herdsmen who, together with well-trained dogs, always recognise the best pasture.
