Journey through Italy from north to south in search of wellness and good food
Rosewood, starred cuisine in the hills
An enchanted landscape amidst rolling Tuscan hills encloses, in the heart of the Val d'Orcia, the Rosewood Castiglion del Bosco diffuse resort.
Within the estate, which boasts a long history, years of neglect and then a skilful restoration, lies La Canonica, the school where food becomes experience.
Guided by chef Matteo Temperini - already two Michelin stars at the Campo del Drago restaurant, also on the estate, an experience not to be missed if you are in the area for the refinement of the dishes - guests learn the art of Tuscan cooking from simple, local ingredients. It begins with a walk through the estate's organic vegetable garden, the harvesting of raw materials, and then on to the kitchen. Lessons vary between traditional classics and more original proposals: from the course on fresh pasta, where you learn formats and sauces according to the rhythm of the seasons, to "Forgotten Flavours", a dive into the recipes of the peasant past, recovered and reinterpreted. There are also vegetarian proposals and the most convivial of Italian experiences: Pizza Express, with wood-fired oven and final tasting.
